I don't hollow grind chisels and gouges for any reason other than to reduce the width of the honing bevel. If I had a flat honing disc or belt sander to produce a primary bevel quickly, as long as it didn't leave deep scratches at the cutting edge, I'd probably use that, especially in the case of gouges.
